One great way to start eating healthier is to focus on eating more vegetables each day. Vegetables are packed with nutrients, fiber, vitamins, and so many more health benefits to keep us healthy. Zucchini is one of my favorite vegetables and making these zucchini waffles are a great way to get some yummy wholesome vegetables.

These zucchini waffles are made with 5 real food ingredients (zucchini, mozzarella cheese, egg, a little bit of wheat flour, and Italian seasoning). Takes only 10 minutes to throw together and cook. Plus, they are good for you and you get a full serving of vegetables. How to make Savory Zucchini Waffles

Making savory zucchini waffles is easy and only takes less than 10 minutes from start to finish. Here are the steps to make it:
1. Preheat your waffle maker
2. Shredded your zucchini using a cheese grater or
3. In a bowl, mix together shredded zucchini, egg, Italian seasoning, tbsp of wheat flour, 1/2 cup of cheese.
4. Spray your waffle making
5. Place the zucchini batter onto the waffle maker and fill in the whole waffle space
6. Close the lid and let the waffle maker cook for 3-5 minutes or until the zucchini waffle is done
7. Serve and top with alfredo sauce, tomato sauce, butter, or cheese.

Can you make these waffles ahead of time or freeze the waffles?

Yes! If you want to have waffles ahead of time, there are two ways you can do this. One way is to cook all the waffles and let them completely cool down. Then place the waffles into a airtight container or tortilla warmer. Store in the fridge for up to 2 days. If you want to store them longer, then place waffles on a sheet pan and place them into the freezer. Once they are frozen then place 2-3 waffles into an airtight container or gallon size bags. When you are ready to eat them, warm the waffles in the microwave or reheat them in the waffle machine until warmed.

The second way is to make all of the zucchini waffle batter ahead of time. Cover the bowl with a lid, plastic wrap, or foil and place it into the fridge. Zucchini waffle batter can last up to 2-3 days. When you are ready to eat the waffles, you heat the waffle iron, take the batter out of the fridge and give it a quick stir. Then add the batter to the waffle machine and you’ll have perfectly warm fresh savory waffles.

Ingredients
  

  • 1 egg
  • 1/2 cup mozzarella cheese (any cheese would work)
  • 1 cup shredded zucchini (about 2 zucchini's)
  • 2 tbsp wheat flour
  • 1 tsp italian seasoning

Instructions
 

  • Add all ingredients in a bowl and mix together. Spray waffle maker and pour zucchini batter and spread evenly. Cook for 5 minutes and when ready use a spatula to put zucchini waffle onto a plate.
