  • Spinach

  1.  Drizzle a little bit of olive oil onto a medium-hot pan.
  2.  Add spinach and sauté until wilted.
  3. Add diced tomatoes and cook for another minute.
  4. Add the eggs and feta and stir to scramble.
  5. Continue cooking until the eggs are fully cooked.

Ingredients
  

  • 4 eggs and 1 egg white
  • 2 Large handful of spinach
  • 1 cup cherry tomatoes
  • 1/4 cup feta cheese

Instructions
 

  • Drizzle avocado oil onto a medium hot pan.
  • Add spinach and sauté until wilted.
  • While spinach is cooking, dice the tomatoes and scoop or squeeze out the seeds & juice.
  • Add dice tomatos and cook spinach and tomatos a minute.
  • Then add the eggs and feta and stir to scramble. Continue cooking until the eggs are fully cooked.
