Harvest Quinoa Salad
There is nothing better than a colorful, healthy, delicious salad. I love this salad because it’s packed with a variety of fruit and vegetable colors. It’s so important for our diet to eat the rainbow. Each different color of fruits and vegetables gives your body a good variety of rich vitamins and nutrients.
This year, I’ve been focusing on creating meals that have a good variety of vegetable and fruit colors. This salad was inspired to be a salad full of rainbow-colored fruits and vegetables.
Nutritional Benefits inside this Harvest Quinoa Salad
- Mixed greens: These mixed greens are rich in vitamins, dietary nutrients, and minerals.
- Quinoa: One amazing health benefit to quinoa is that it’s a complete protein, fiber, and a great source of lysine (an essential amino acid). Quinoa is a whole grain and helps promote healthy gut bacteria.
- Avocado: Avocados are very nutritious. They are packed with healthy fats (monounsaturated fat), potassium, fiber, and antioxidants.
- Radish: Radish is a great source of folate, vitamin B, and vitamin C. They help support a healthy digestive system.
- Grape tomatoes: Full of fiber, vitamin A, and vitamin C. They also are rich in lycopene (a nutrient in plants that have antioxidant properties).
- Sweet potatoes: Sweet potatoes are extremely nutritious. They help your gut health, immune system, and brain function.

Benefits of Making Homemade Salad Dressing
Making homemade salad dressing is one of the best things you can do to avoid all the not-so-great stuff that is packed in-store brought salad dressings. Making homemade dressing means that your dressing will be full of real, fresh ingredients; taste better, and have no preservatives, chemicals, refined oils, refined sugars. You’ll be surprised just how easy and quick it is to whip up a homemade healthy dressing.
Best Way to Cook Quinoa
- Add 2 parts pre-washed quinoa to 1 part water to a pot.
- Heat on medium-high. Bring to a boil then reduce heat to low. Cover and simmer for 15 minutes. Next, remove quinoa from heat and let it sit 5 minutes still covered with the lid.
- Fluff the quinoa with a fork.
How to Make Harvest Quinoa Salad from Scratch
- Prep all the toppings and cook quinoa.
- Add mixed greens to a large bowl.
- Place all the prepared toppings on top of the mixed greens.
- Mix up homemade balsamic dressing in a small bowl or jar.
- Drizzle the salad with the mixed dressing.
- Toss to combine the dressing with the salad.
- Serve in bowls.

Harvest Quinoa Salad
Ingredients
- 2 cups Baby kale and mixed greens
- 1/2 of an avocado sliced
- 1/2 cup of cooked diced sweet potatoes
- 1 diced radish
- 1/4 cup Quinoa
- 1/2 cup Grape tomatoes
Instructions
- Add all the ingredients together and topped with your favorite dressing. I love using homemade balsamic dressing.
