Pineapple Coconut Popsicle

Pineapple Popsicles are the perfect, healthy, cold summer treat. These popsicles are loaded with lots of vitamin C, antioxidants, and are rich in essential vitamins. All you need are pineapple, coconut milk (unsweetened), and vanilla extract.

      • Greek yogurt: Easy way to boost your protein by adding in a 1/2 cup of greek yogurt.
      • Chia seeds: These tiny little seeds add so much fiber and healthy fats. I love adding a tablespoon to my popsicles blend.
      • Flaxseeds: Great to add a boost of fiber and minerals. A tablespoon is a perfect amount to add-in.
      • Hemp seeds: If you want a boost of healthy fats, omegas, and minerals add a tablespoon of hemp seeds.
      • Vital Protein Collagen: Add in a scoop of this if you want a boost of vitamins that help your skin, hair, nails, joints, and digestive system.

      How to make the perfect healthy popsicles

      • Blend all your ingredients well together: Add Pineapple, coconut milk, and vanilla extract in a blender.
      • If using frozen fruit, add liquid first and then your ingredients: This helps so your frozen fruit doesn’t get stuck in the blades of the blender, if your popsicle mix is too thick, add some more liquid.
      • Use a high powder blender: I love using my Blendtec. It’s amazing how well it blends everything together.
      • If you want chunks of fruit pieces in your popsicles:  Add your fruit chunks to the molds after pouring your liquid popsicle blend.

      Pineapple Coconut Popsicles

      These Pineapple Coconut Popsicles are the best. They are delicious and perfect for a refreshing healthy summer treat!

      Prep Time 5 mins
      Freeze 12 hrs

      Equipment

      • Blender

      Ingredients
        

      • 4 cups Pineapple, cut into pieces
      • 1 cup Coconut milk unsweetened
      • 1 tsp Vanilla extract

      Instructions
       

      • Add pineapple pieces, coconut milk, and vanilla extract to a blender. Blend until smooth.
      • Pour mixture into a popsicle mold, add popsicle sticks, and place into the freezer.
      • Freeze for a least 6 hours or overnight.
      • To easly remove popsicles from the molds, run the molds under warm water for 10 seconds and then gently pull the popsicle sticks out.
