 Tips/tricks to make the perfect Tomato Cucumber Salad

  • Use leftover chicken or rotisserie chicken: To make this salad quicker to make, use already cooked chicken. Either from leftover chicken or from a rotisserie chicken. I always like to make extra chicken so I can use the chicken for gyros as well.
  • Use a chopper for the cucumbers: If you have a veggie chopper use that to cut the cucumbers! I absolutely love using my veggie chopper, it makes everything so easy and fast. The one I have is a full star vegetable chopper, I highly recommend getting one.
  • Use cherry tomatoes: Any tomato will work, but cherry tomatoes are quick and easy to cut in half.
  • For the simple 4 ingredient Tzatziki sauce: Make sure to strain your cucumbers to let out the extra water and stir it well to combine.

Easy Greek Chicken Avocado Cucumber Salad

Delicious healthy greek salad with seasoned greek chickem, avocado, cucumber, cherry tomato, and topped with a homemade taziki sauce.

Ingredients
  

Greek Salad Ingredients

  • 1 Long Cucumber
  • 1 Avocado
  • 2 cups Cherry tomatoes

Chicken Marinade

  • 4 Chicken tenders (or chicken breast)
  • 2 tbsp Olive oil (or avocado oil)
  • 1 Lemon
  • 1 tbsp Oregano
  • 1 tsp Onion powder
  • 1/2 tsp Real salt
  • 1/4 tsp Black pepper
  • 1 tbsp Minced garlic
  • 1/4 cup Greek yogurt

Simple Tzatziki sauce

  • 1/2 Cucumber partially peeled
  • 1 cup Greek yogurt
  • 1/8 Black pepper
  • 1/4 tsp Real salt

Instructions
 

Making the chicken

  • Place chicken into a gallon-size ziploc bag
  • Whisk together all the marinade ingredients. Pour the mixted marinade into the chicken bag. Seal the bag and use your hands to mix the marinade mixture so it evenly coats the chicken. Refrigerate for 30 mins or up to 24 hours.
  • Add chicken to a grill and cook each side for 6-7 minutes until the chicken is cooked. (If you don't have a grill you can cook chicken on medium-high heat in a pan on the stove.)
  • Let the chicken cool for 5 minutes, then chop the chicken into bite-size pieces.

Making the Greek salad

  • Prep all the vegetables: Chop cucumber into bite-size pieces, diced the avocado, and cut the cherry tomatoes in half.
  • In a medium size bowl, add in all the ingredients and mix them together. 
  • Customize your salad with your choice of toppings: Tzatziki sauce, kalamata olives, feta cheese, and antyhing else.

Homemade Tzatziki Sauce

  • Grate the cucumbers with a grater. Place the grated cucumbers in a fine-mesh bags and hold over a bowl and strain out as much water as you can.
  • Put the strained grated cucumbers in a medium-sized bowl. Mix in greek yogurt and salt and pepper until everything is evenly combined.
  • Cover and store in the frigde until used. Before you serve, give the sauce a quick stir.
