What makes these pumpkin cookies healthy?

These pumpkin cookies are made with nutritious organic oats and whole wheat flour. Oats and wheat flour give you lots of fiber that your body needs daily. These cookies have no added sugar and are naturally sweetened with pure maple syrup. You’ll absolutely LOVE them.

 Ingredients for Healthy Pumpkin Cookies

These cookies are packed with nutritious healthy ingredients. Here’s what you’ll need:
  • Oats: I buy the organic instant oats from Bob’s Red Mill, but you can also use oats and blend them up a bit in a blender.
  • Whole wheat flour
  • Baking powder
  • Pumpkin spice
  • Ground ginger
  • Egg
  • Canned pumpkin
  • Pure maple syrup: Swap out any syrup for pure maple syrup. The only ingredient is maple syrup – that’s it! So much better for you than all the other syrups that are loaded with high fructose corn syrup, caramel color, and tons of other not-so-good preservatives. I love this brand.
  • Chocolate chips (optional, but worth it)

Healthy Pumpkin Cookies

servings - 12

Ingredients
  

  • 1 cup Organic instant oats
  • 3/4 cup Whole wheat flour
  • 2 tsp pumpkin spice
  • 1 tsp ground ginger
  • 1 + 1/2 tsp baking powder
  • 1 egg
  • 1/2 cup pure maple syrup
  • 1 cup canned pumpkin
  • 1/4 cup chocolate chips (optional, but worth it)

Instructions
 

  • Preheat oven to 325 F and line a baking sheet with parchment paper or a silicone mat.
  • Mix all dry ingredients and spices together in a bowl. Next mix in pumpkin, egg, applesauce, and maple syrup.
  • Lightly mix in the chocolate chips if adding them.
  • Use a cookie scooper and place 12 round cookie scoops onto a baking sheet. Flatten each cookie using the back of the scooper.
  • Bake for 12-15 mins. Cool on the baking sheet for 5 minutes before eating.
