This recipe has three different kinds of cheese: mozzarella cheese, parmesan cheese, and cottage cheese. Cheese is full of calcium, fat, and protein. Here’s what you need for this Zucchini Lasagna
- 3 – 4 medium zucchini’s
- 1 pound Grass-fed beef
- 1 1/2 cup shredded mozzeralla chesse
- 15 oz pasta sauce or tomato sauce
- 1 egg
- 1 1/2 cup full fat small curd cottage cheese
- 1/2 cup parmesan cheese
- 1 tsp dried parsley
- 1/2 tsp real salt
- 1/2 tsp black pepper

Zucchini Lasagna
Ingredients
- 3-4 medium zucchini's
- 1 pound grass-fed beef
- 15 oz pasta sauce or tomato sauce
- 1 1/2 cup shedded mozzeralla cheese
Cottage cheese lasagna filling
- 1 1/2 cup full-fat small curd cottage cheese
- 1/2 cup parmesan cheese
- 1 tsp parsley
- 1/2 tsp real salt
- 1/2 tsp black pepper
Instructions
- Preheat oven to 375 F and set aside a 9x13 baking dish.
- In a medium size pan add meat. Cook on medium-high heat. Break down the beef with a spatula and cook all the way through until browned.
- Stir in pasta sauce in the cooked meat and simmer until the sauce thickens, stir frequently.
- In a bowl mix together the cottage cheese ingredients: egg, cottage cheese, parmesan cheese, parsley, real salt, and black pepper.
- Cut the zucchini into thin slices. First cut off both ends and then cut the zucchini in half. Stand half of the zucchini vertically, and slice along its length into thin slices.
- Lay a layer of zucchini slices on the bottom of the baking dish, top with half the meat sauce and 1/2 cup of mozzarella and half of the cottage cheese filling mixture.
- Repeat this again. After add another layer of zucchini on top and topped it with 1/2 cup mozzarella.
- Bake in oven for 45 mins. Let it cool for 15 mins to allow lasagna to set.
