Chicken Sausage, Zucchini, & Sweet Potato Quinoa Bowls

Equipment

  • Oven
  • Instant pot
  • Stove pot

Ingredients
  

  • 12 oz chicken apple sausage (all natural brand)
  • 3 medium zucchini
  • 2 medium sweet potatoes peeled
  • 1 tbsp avocado oil (or olive oil)
  • 1 cup quinoa

Instructions
 

  • Chop up zucchini, chicken apple sausage, and sweet potatoes. Add zucchini and sweet potatoes on a large sheet pan. Drizzle with oil and cook in the oven at 425 for 20 minutes. Take the pan out and add chicken apple sausage to the pan and cook for another 20 mins.

Cook quinoa

  • I like to cook mine in my @instantpot. Add one cup of water and cup of quinoa. Cook on high for 1 minute. Naturally release for 10 mins.
