Here’s what you need

  • Eggs

Step by step Instructions

  1.  Drizzle a little bit of olive oil onto a medium-hot pan.
  2. Add chopped mini bell peppers and sauté for 2 minutes
  3. Add the eggs and mozzarella cheese and stir to scramble.
  4. Continue cooking until the eggs are fully cooked.
  5. Add diced avocado and stir to mix in.

  • 8 Mini bell peppers (red, yellow, orange)
  • 6 Eggs
  • 1/4 cup Mozzarella cheese
  • 1 Avocado diced
