Step by step Instructions
- Drizzle a little bit of olive oil onto a medium-hot pan.
- Add chopped mini bell peppers and sauté for 2 minutes
- Add the eggs and mozzarella cheese and stir to scramble.
- Continue cooking until the eggs are fully cooked.
- Add diced avocado and stir to mix in.
